One delicious appetizer equals happy stomachs. This starter is very simple to prepare and always turns out to be a hit.  This is also a great way to use up any leftovers you may have laying around. Of course I would recommend following my Simple Parmesan Rissoto recipe to make a fresh batch so that everyone can enjoy them.

You will need to make sure you risoto has been chilled completely so that they are easier to work with and stuff.

Start off by forming 1″ to 1-1/2″ round balls.

rissoto balls uncokedCut mozzarella into 1/2″ cubes.

With your thumb make a large indentation into the rissoto balls and stuff the cheese inside. Roll the ball around in your palms to ensure the cheese is completely covered.

Roll the risotto balls into some panko to coat.

Place your risotto balls into your hot oil a couple at a time. Too many at once and you will risk the temperature dropping too much. You want to try and maintain 350 degrees throughout the cooking process.

You can make many variations of this dish by altering the rissotto or the filling. You can try adding meat, veggies, or different types of cheese.
