  • 1 1/2 Cups of Dried Lentils

  • 1 tbs Cumin Powder

  • 1 tbs Honey
  • 1/2 tbs Cumin
  • 1/2 tbs Cardamom
  • 1 tsp Paprika
  • 1 tsp Cinnamon
  • 1 Medium Carrot Finely Chopped
  • 1/2 Onion Chopped
  • 1/2 Cup Dried Cranberries
  • Fresh Chopped Parsley

Lentils are known for their health benefits, what may be lesser known is how diverse they can be. This cold salad not only tastes amazing but provides some amazing health perks to boot. Lentils have been known to help reduce blood cholesterol and reduce the risk of heart disease, the fiber, folate, and magnesium are the clear winners here. Your digestive system may thank you as well!

It does not take much to bring this dish together, you may however need a trip to the spice aisle. I thought about this dish for weeks before pulling the trigger and putting it all together. My only regret is that I waited so long to do it. I had the thought of combining cardamom, honey, cumin, and a pinch of cinnamon to cool al dente lentils.

Start by adding the salt, cardamom and cumin to cold water. Add your lentils and bring to a boil. Once the lentils start boiling you will need to reduce the heat to medium allowing them to simmer for 20 minutes. Some lentils make take more or less time to cook, you will need to taste them often in order to get the right texture. I prefer them to have a little bit of a bite left to them, overcooked and they become mush.

While your lentils are cooking you can finely dice up one carrot and 1/2 an onion. This will give the salad a good crunch and some color. You can omit the onion or any part of this recipe, lentils are very forgiving and will work with just about anything you decide to add or remove.

Lentil Salad - Honey CuminIn a small bowl combine your olive oil, honey, cumin, cardamom, paprika and cinnamon. Once your lentils have cooked make sure to drain them well and transfer to a large bowl. Add your oil mixture, carrot, onion, dried cranberries and parsley. Toss the ingredients together and place in the refrigerator to cool, you can of course sneak a few bites, it is just as good hot!

So lentils can be so good for you and taste amazing as well. It is full of protein, fiber, complex carbs, all of which can help you maintain good energy and digestive health. Who knew the lentil was so good?
